This week's theme is favorite recipes, so here's mine:
Spinache & Apple Salad
Ingredients:
For raspberry vinaigrette, combine:
1/3 cup extra-virgin cold pressed olive oil
1/3 cup balsamic vinegar
1/3 cup raspberry Polaner All-Fruit
For salad, layer on each salad plate:
1/2 cup fresh spinach leaves, washed, patted dry and torn into small pieces
1/4 cup diced Pink Lady apple
1 T. feta cheese (optional)
1 T. chopped walnuts
dash freshly ground black pepper
Directions:
Drizzle with vinaigrette and serve.
